Inspired by Pinch of Yum‘s creation, summer salads are refreshing and light – not to mention perfect for a fresh start to the day. After a weekend of indulging in all your favorites and perhaps a cheat day, this Green Goddess Quinoa Salad is a guilt-free, healthy vegan and gluten-free appetizer, snack or lunch for the week.
This salad is easy, filling, and most importantly, DELICIOUS! As an added bonus, it is healthy in so many ways:
Quinoa is my protein go-to. Toss in an array of of veggies, and create anti-oxidant and nutrition packed rainbow of produce to your salad. My favorites are spinach, baby kale, yellow and orange bell peppers and cherry tomatoes – YUM!
- 2 cups cooked quinoa
- 2 cups halved cherry tomatoes
- 1 cup spinach leaves
- 1 cup baby kale
- 1/2 cup yellow and/or orange bell peppers
- 1/2 cup (or to taste) Light & Creamy Green Goddess Dressing
- Toss all ingredients together to combine! Mix away!
