In my one day hustle to New York City, I scrambled to make the most out of my trip and discovered the perfect spot for vegan eats to share with you. So what wholesome goodness did I refuel with? Not salad for sure.
Debunking the myth that vegans only eat salads, Beyond Sushi offers a vegan array of vibrant hued rolls, rice paper wraps and individual pieces of fruit and vegetable-topped rice. Each serving includes a complementary tofu-based sauce in flavors of white miso, carrot ginger and toasted cayenne.
My particular favorite component of every dish are the grains. Every menu item contains either black rice or six-grain rice, each containing health benefits more potent than plain white rice. Purple barley is packed with protein, fiber and antioxidants. Black rice is higher in fiber and iron, with benefits to help reduce blood pressure. Brown rice is a whole food favorite high in fiber, protein and vitamin B. Rye berries are also high in fiber and protein, in addition to phosphorus, iron and potassium. And, red rice contains monacolins, which helps to lower LDL or bad cholesterol. The nutritional benefits are endless in the grains alone. The best part is leaving refreshed and refueled with whole food goodness – a guilt-free indulgence.
Considering that Beyond Sushi is locally sourced, prices are reasonably affordable. Rolls cost $6.89 for eight-bites, side salads and starter soups for $3.91, rice paper wraps for $9.25, and desserts for $2.99.
